Wildschönau Krautinger – a unique specialty
Some swear by it, others turn up their noses – but everyone agrees on one thing: Wildschönau Krautinger is a very special specialty.
Not only because it is produced exclusively in the Wildschönau high valley in the Lower Inn Valley. The origins of this tradition date back to the time of Empress Maria Theresa (1717–1780). She granted 51 farmers in Wildschönau the right to distill schnapps from the white turnip – also known as the water turnip. The reason was simple: hardly any fruit grew at that altitude, and the valley's inhabitants often lived in modest circumstances.
To this day, Krautinger remains closely linked to this history and is considered one of the region's most famous specialties.
The production process, however, is anything but simple. In summer and autumn the turnips are harvested, carefully washed and mashed. The mash is then thickened, fermented with yeast for about 48 hours and finally distilled.
What sounds simple is actually a true art. For the Krautinger, everything has to come together perfectly – from the homegrown seeds and the quality of the beets to the fire in the still, traditionally lit with beechwood.
This is how a very special schnapps with an unmistakable character is created. A true rarity, appreciated by connoisseurs not only for its unique taste, but also for its traditional significance and its well-known beneficial effects on the stomach.
